Aperol Sour is a modern interpretation of the classic sour cocktail family. The Sour family is based on one of the oldest cocktail structures in the bar world. Aperol brings a more modern character to this structure. Created in 1919 by the Barbieri brothers in Padova, Italy, Aperol quickly became an important part of aperitif culture with its bright orange color and slightly bittersweet aroma. It contains orange, rhubarb and various herbal flavors, and this structure makes it perfectly compatible with citrus.
Although Aperol is generally known for its Spritz cocktail, different interpretations have emerged in the bar world. Aperol Sour is one of these interpretations. While lemon juice enhances the citrus character of Aperol, sugar syrup balances the cocktail. If egg whites are used, the texture of the cocktail becomes more velvety and frothy.
