The Airmail cocktail is a special drink that reflects the aviation excitement of the 1930s. In those years, air travel was just becoming widespread, and the distances between continents were really getting "shorter" for the first time. When people looked up to the sky, they saw not only airplanes, but also the beginning of a new era. Bars had also begun to incorporate the spirit of this new era into their menus.

The name Airmail comes from the fast communication system of this period. "Airmail", or airmail, was a new and exciting service where letters were sent by airplane. In some bars in Cuba, this cocktail was served with a small "airmail" stamp. This gave the drink a character that was both fun and in the spirit of the period.

The recipe is actually based on a very simple balance. The rum represents tropical warmth, while the lime juice gives the cocktail a lively acidity. The honey syrup softens these two strong flavors, adding a warm and rounded touch to the mix. But what really sets the Airmail apart is the sparkling wine added at the end. Champagne or a good sparkling wine lightens the structure of the cocktail and adds a sense of celebration.

45 mlWhite Rum
15 mlHoney Syrup (honey + water mixture)
15 mlFresh Lime Juice
60 mlChampagne or Sparkling Wine

Method

    Add the rum, honey syrup and lime juice to the shaker.

    Shake with plenty of ice for 10-12 seconds.

    Strain into a chilled coupe or flute glass.

    Add sparkling wine.

    Garnish with lime peel and serve.
